Scallions

Scallions are young onions picked before the bulb has formed and may be eaten raw or cooked.  Scallions have a milder flavor than onions.  Purchase scallions with green crisp tops and white bottoms.

To prolong their life in the fridge, either store them in a tightly closed plastic bag, or upright, immersing the roots in a glass of water and placing a plastic bag over the top. That should keep them crisp for up to a week.

Taste tip: The slimmer the bottom of the scallion, the sweeter the taste.

Storage Tips

Scallions are pretty perishable on the whole; they're best used within 3 to 5 days.
